First published in 1884, this is Mary Johnson Bailey Lincoln's landmark cookbook, written at the request of her pupils at the Boston Cooking School to preserve the recipes and lessons taught there. Lincoln aimed to produce not just a recipe collection but a book covering the chemistry and nutrition of food alongside practical cooking instruction, covering everything from soups, breads, and baked goods to meats, fish, poultry, sauces, and pastries. The book also includes guidance on nutrition, dining room arrangement, and a course of instruction for cooking teachers. The 26 blank recipe pages at the rear remain entirely unused. One of the front endpapers carries a handwritten note reading "mince meat" and the other bears a handwritten recipe.

Bound in 3/4 cloth over marbled boards. Illustrated throughout with in-text engravings.

Good condition. Binding shows heavy shelf wear and rubbing to the boards, slight cloth splitting at the foot of the spine, and heavily bumped and rubbed corners. Interior pages have light foxing in places, some dampstains, and a handful of dog-eared pages. Good. Item #116
